[Recipe] Triple Chocolate Cranberry Cookies

I snagged this recipe off of a baking LJ comm a while back and gave it a wee bit of modification. Overall, though, I'm quite happy with the way it turned out. Really tasty, all in all. So, no further ado, the recipe:


Triple Chocolate Cranberry Cookies

Ingredients

* 1 cup all-purpose flour
* 1/2 teaspoon baking soda
* 1 1/4 teaspoon cinnamon
* 1/4 teaspoon salt
* 1 1/4 sticks unsalted butter or margarine, softened
* 1/2 cup white sugar
* 1/2 cup brown sugar, packed
* 1 large egg
* 1 1/2 teaspoons vanilla extract
* 1/2 teaspoons almond extract
* 1 cup old-fashioned oats (although the Quakers Quick 1-Minute Oats work just as well, from what I've seen)
* 1/2 cup semi-sweet chocolate chips
* 1/2 cup milk chocolate chips
* 1/2 cup white chocolate chips
* 1 cup dried cranberries

Method

1. Preheat oven to 350 degrees F. Line two baking sheets with parchment paper.

2. Whisk flour, baking soda, cinnamon, and salt in a medium bowl to blend. Set aside.

3. Cream butter and both sugars in large mixing bowl until smooth. Beat in egg and vanilla. Add flour mixture and oats and mix until blended. Stir in all chocolate chips and cranberries.

4. Drop by rounded teaspoonful onto ungreased baking sheets, at least two inches apart. Bake cookies until edges are light brown, 10 - 12 minutes, switching sheets top-to-bottom and front-to-back halfway through. Cool on sheets 5 minutes. Transfer to wire racks to cool completely.

Makes about 3 dozen cookies.

They're usually a big hit for being awesomely chocolate-y with extra cranberry tartness. Hope you like them as much as I usually do!
