how can a person learn a music piece just by listening?

You know, I keep wondering about the first point too, I love playing the piano, but I can never ever just improvise from just listening to the music. I need scores and practise before I can actually play the music. Others are just really lucky, that they can play from just knowing the tune... *envies*
