I've made a grated carrot salad which is pretty close to that recipe..it's really nice (: As far as an alternative Moroccan dessert, maybe something along the lines of sweetened couscous with almonds and dates.

Or look for a recipe called 'Om Ali'. It's basically rice pudding, really yummy!

Try www.recipesource.com or www.epicurious.com for ethnic recipes. I'm avoid having lamb twice in the first group. And, you have three very similar groups, with Lebanese, Morroccan, and North African. I'd drop two of them, maybe do Sub-Saharan Africa instead, and perhaps Japanese?

Sub-Saharan does sound good.
I don't think it's going to matter that the groups are similar. It's just to give the instructor an idea of what to prepare for the alumni banquet.
Thank you for pointing out the lamb thing. I completely missed that. But I think you're right and lamb twice would be over kill.
