Have saved this, it sounds really nice. I don't like coriander, do you think parsley would work instead?

Parsley would do fine.

Also Lyn, I lined my loaf pan with baking paper. I always use baking paper when I cook.

I always use baking paper, I think it's a fabulous invention. :)
