I just use the standard type of little red eating apples, whatever happens to be hanging around the house at the time. Usually I buy "Gala" or "Red Delicious" or "Fuji" apples.
I'm not sure what varieties of aplles there are in the States

I always using baking paper when I bake so I can be sure of easily getting what I've cooked out of the tin.

The cake looks so very yummy!

I love apples in so many desserts, including apple crisp, pie and a pudding my mother use to make. At one time, I came across the recipe for the pudding, but never the recipe for the sauce. The pudding really needs the sauce.

The cake looks so very yummy!

It is. We had it with hot custard as a desert.
The left over cake we warmed up in the microwave the next day prior to eating it

Self-raising flour isn't available here, but guess I'll just add some baking-powder.

Yeah self-raising is only flour with the raising agent already added.
To convert plain flour to self raising flour add:

either 2 teaspoons of baking powder to one cup of plain flour

OR

add 1 teaspoon of bicarb of soda to one cup of plain flour
