Best whole wheat bread recipe I have ever baked. I used maple syrup for the sweetener and did add 2 tablespoons of wheat gluten flour. In the notes at the bottom of the recipe, they discuss the "tangzhong technique" to extend the life of baked goods. I had never heard of it and will have to try it some time.

Beating on that dough can be highly therapeutic! :D But sadly I get tennis elbow from kneading now so I have to let the bread machine do the pounding. Then I bake the loaf in the oven because the bread machine pan makes dysfunctional square loaves.
