Classic 100% Whole Wheat Bread Recipe

Best whole wheat bread recipe I have ever baked. I used maple syrup for the sweetener and did add 2 tablespoons of wheat gluten flour. In the notes at the bottom of the recipe, they discuss the "tangzhong technique" to extend the life of baked goods. That's quite similar to the wheat bread I made weekly while in college. It looks marvelous and makes me miss those days of pounding out my scholarly frustrations on the dough.

The texture is so fluffy for whole wheat bread.
Beating on that dough can be highly therapeutic! :D But sadly I get tennis elbow from kneading now so I have to let the bread machine do the pounding. Then I bake the loaf in the oven because the bread machine pan makes dysfunctional square loaves.
