Wow. A few weeks ago I began teaching choir to middle school students at a Catholic school, and this past week I was asked to become their accompanist for their weekly mass, so I find myself quite interested in your thoughts, even though I'm not Catholic. Speaking as someone who is not from the Catholic tradition and who is expected to teach some Catholic music (if such a thing exists - my ignorance is such that I don't even know if there is strictly Catholic music, aside from the musical parts of the liturgy during the mass - if that's even the right term for all the musical call and responses that occur during the very few masses I've attended), I think the music teacher would appreciate all the suggestions you can give her. My only suggestion would be to suggest over a course of time, rather than just giving her pages and pages of suggestions - that would be overwhelming and discouraging

I think mass before school is a better idea. I've never heard of a school that had its religious service at the end of the day! By that point all kids will want to do is go home.
