Honestly, go to someplace like Best Buy and talk to the employees (more than one!) at length. There are different kinds now and you'll need to figure out which recording method suits you. For example, you can get ones that record onto tapes, onto small mini-discs, or onto a built-in hard drive (eliminating tapes altogether). It can be overwhelming at first, but seeing examples of what's available in front of you while discussing it can help you sort it out.

I got a Sony with a 30 gig hard drive. It cost me $550. The recording quality doesn't seem to be quite as good as other video cameras, though, so I bet if you record to tape or disc the quality would be better. You'd have to ask a store employee who knows more about it, though, cause that's just my hunch.
