Oooh. It seems that in France (from what I've seen on recipe sites) that they have farine de mais jaune and farine de mais blanche. I'm guessing this is the same idea as the wehat-germ being sperated (or not seperated) from the rest in white and brown (whoelgrain) flour, only with corn. So the yellow one would be like wholegrain, only whole CORN :P I think. Who knows.

I think it's probably more a matter of my grandmother's infallible pav recipe is really infallible, as the idea of me being better than you at baking is simply one too odd to be contemplated.

and cornflour is vaguely yellow.
