In rich text mode (get there by clicking the blue link at the bottom of the update page) you just highlight the text you want under the cut, and click the add lj cut button: (...) A little box will pop up asking you to enter the lable for your cut, like "meme" or "ranting" or "click me". Enter one, press okay, bob's your uncle. In regular text mode, you have to use html code, but its really easy. At the begining of the text you want under the cut, type a carrot "<" then lj-cut text="title" and then another end carrot ">" then, at the end of the text you want under the cut, type carrot /lj-cut and another end carrot. so it should look like this: (lj-cut text="ranting" OMG my life is sooooooooo terrible...etc. (/lj-cut) just replace the parenthesis with carrots and you're good to go.
