Our tomato plant is going crazy. We've hit the "more tomatoes than we know what to do with" phase, same with the basil. I figure I'll do lots of pesto to freeze. I have a few fresh tomato ideas like tomato cucumber salad, salsa and bruschetta. Send me any other ideas please! You know how cooking challenged I am

Slice your tomatoes. Lightly salt and pepper them. Lay the rounds on a plate. Slice mozzarella into rounds. Layer on top of tomato slices. Lightly salt and pepper them. Chop up fresh basil and sprinkle on top of each stack. Drizzle some olive oil and balsamic vinegar on top of each stack. Eat!
