Our tomato plant is going crazy. We've hit the "more tomatoes than we know what to do with" phase, same with the basil. I figure I'll do lots of pesto to freeze. I have a few fresh tomato ideas like tomato cucumber salad, salsa and bruschetta. Send me any other ideas please! You know how cooking challenged I am ( Read more... )

Don't forget caprese salad. Two birds, one stone!

Slice your tomatoes. Lightly salt and pepper them. Lay the rounds on a plate. Slice mozzarella into rounds. Layer on top of tomato slices. Lightly salt and pepper them. Chop up fresh basil and sprinkle on top of each stack. Drizzle some olive oil and balsamic vinegar on top of each stack. Eat!

Roast those babies! Toss them with a little olive oil and a touch of salt and plop them in a 300 degree oven until they start to shrivel up. They freeze well and are awesome with mac n cheese, just for a start. Looks like a great time was had last night, yay awesome neighbor.

Yup. I did it a couple of years ago when I had them coming out of my ears from the CSA (next year, I hope to have some of my own). If they're cherry or grape, you can do them whole. If they're bigger, I'd cut them in half first.

I forgot to mention. My dad freezes them fresh and then uses them in the winter to make sauce.
