First Friday of Lent

About a month ago, Ian and I ventured straight into the depths of hell itself (Wal-Mart) and came out with this huge bag of Swai. Neither one of us had heard of this fish so we absolutely had to try it.



This bag is massive. Taking two fillets out of it didn't even put a dent into it.

I did some research and apparently Swai is the new type of cheap white fish. It's really good. The first recipe I tried with it was a Simple Baked Swai. We liked it but the problem we always have with baking food that requires breading is that the breading doesn't get crunchy enough, even with the broiler on.




Since we have plenty of the Swai, expect more to come using it.
