They're pretty yummy, yeah. And not *too* guilt-inducing, ;-). Although, I tend not to eat them when I'm feeling super lazy, because they're not quite as easy as just reaching into a bag. Still easy though. I'm thinking my next variation on it will be slices of pear and a little cinnamon sprinkled on the mascarpone, instead of berries.

Lisa, that looks divine. I so wish graham crackers were available here. And that mascarpone came in a sheep or goat or soy variety. Similarly, my new summer snack is strawberries mascerated in brown sugar (I'd never tried it with brown before a couple days ago & it's amazing!) and then mixed into yogurt. Addictive. Just like your treat looks.

BTW, if all went the way it should, Jason arrived back on British soil about 10 minutes ago. He was supposed to come home on Monday, but the ash cloud keeps floating around Europe, shutting down airports at random. He was already checked in for his flight, when the announcement came through that Heathrow was closed. The first flight he could book a seat on (as opposed to stand-by) was yesterday.

I could tell it was you, ;-). Thanks for the comment! I bet this snack would also be good with goat cheese; it's not as sweet as mascarpone, but I've had raw honeycomb smothered in goat cheese and topped with berries, and it was delicious. Also, the above snack is even better (in my opinion) with slices of ripe pear rather than berries. I tried that with some friends a couple of nights ago, to a high approval rating, ;-). In general, it's hard to go wrong though with some sort of sweet cracker base, something creamy, fresh fruit, and honey.

I hope Jason arrives home safely soon--hang in there!
