I am attempting to increase my cooking experiences. I have been making about five new dishes each week, and have been enjoying myself immensely

Ouch. yeah, I must admit, if you were going to cook your first cake, cheesecake probably wasn't the best idea. Your average basic cake with icing on might have been a better beginning point. I have never made a cheesecake but I've heard that they can be a fair bit trickier than you'd originally think.
Still, congrats on getting it done, eventually (and sorry about your mixer), and good luck with Justin's birthday cake!!
Well both the cheesecake and the chocolate mud cake came out well - there was only two pieces of cheesecake left on Friday night (and I left them for mum - which relates to my brother & his girlfriend having them). The chocolate cake is sooo rich Jus and I were only able to eat small pieces each - but it is not overcooked as I thought it might me (after 2 hours cooking), only the top (which is now the bottom) was hard.
Am one happy cook.
On the other hand we had Adam screaming practically non-stop from 4 - 6 tonight and by the time I got him to sleep I was completely exhausted. (But now I have to work).
Hey, thats great to hear that it came out well! Chocolate cake that's rich is good - better than the cakes where the only way you can tell it's chocolate is the fact that the cake is a brown colour, hey? I can only really do basic cookery, so I applaud your increasing skills and expanding repetoire!
On the other hand, Adam screaming for hours on end is not a good thing. *gives you and Justin a gentle head-rub to ease the tension* He's probably old enough now that you could start using essential oils directly, albeit in VERY diluted amounts. If it's an upset tummy, you could rub his belly with a warm chamomile teabag? Don't know if that would work - just a thought.
Oh, and what do you want for your birthday? Start thinking about it now so that I can start budgeting and looking as soon as you decide, mmkay?
*huggles* Congrats on your excellent TAFE results!
