My dad started eating biscuits and gravy in full force when he moved to Kentucky. I, like your mom, can't understand why. I've never been able to force myself to try it. I often eat with my eyes, and there's nothing about white gravy that looks good. Also, from a culinary standpoint, there's nothing about white gravy that looks good. It just says to me that they thickened it without cooking the roux, even just a golden brown would bring SO much more flavor to the table.
Plus, it looks like poorly mixed paste.
I like biscuits though. I like to mix honeybutter at the table from scratch, though I'll forgo it if there's an interesting jam to be had that doesn't come in a tiny foil topped plastic tub.
