Well. You have to remember he was taken from Crisis Core, which is set a good seven years before Final Fantasy VII. Because by the time Final Fantasy VII rolls around, he's already deceased.
So to answer your question, he doesn't know what a "soda" is because Gaia isn't really the same as earth, and also at the time he's in ShinRa, the only thing on the ground floor/upper floors are lounges and lunch break tables. So I don't think "soda" really exists as, well. Soda in that world, and I'm not getting any hits on Google about an actual soda in the FF series. xD; Hope that clears it up.
I understand you're playing it safe, but it's honestly not a stretch to assume it exists if a lot of other modern concepts and conveniences do that aren't dependent on mako for their existence. But, hey, it's your call, yo. It's not really a big deal, ha ha.

Why doesn't Zack know what soda is? I'm pretty sure there are soda machines in Shinra HQ, so it's not a stretch to assume he knows what it is.
