Ice cream

I'm bringing dessert on Sunday night for T and I.  Any ideas on what would be a flavor to pair with chocolate chip cookies?  Or oreos?  I'm trying to figure out why kind of ice cream to make.  For the oreos, I'm currently brainstorming some type of mint, like grasshopper pie ice cream (think mint with creme de cacao), or mint with andes mints added
