I suspect that they cut the copyright declaration because they didn't feel comfortable putting the name of any real person or organization in the movie. People can sue over things like that. ("Oh, my religion/organization/Random Acts of Violence Anonymous group doesn't allow viewing any depictions of violence, and you've put my name in a movie with lots of violence!")

As for the legality, this almost certainly falls under fair use.
