1 1/4 c flour
1 T sugar
3 tsp baking powder
1/2 tsp salt
1 beaten egg
1 c milk
2 T cooking oil

If you want butter instead of oil, I always use the trick of melting it in the pan I'm going to use to fry the pancakes in.

I use 2T sugar and make it maple sugar, brown sugar, or some sort of less-processed cane sugar.

I always make some of the flour whole wheat to lessen my guilt.

Yum, pancakes!

I need to start keeping some whole wheat flour on hand. These were made with pecans, blueberries, and a touch of cinnamon. Didn't even need butter or syrup.
