I told M about this one weeks ago and keep forgetting to type it out. If you're into yummy pasta, feel free to copy, this one is easy and so, so good.
Extra Virgin Olive Oil
Boneless Chicken Breast, cut into 1 inch pieces (how much chicken you use depends on how many people you're serving. I generally use 2 boneless breasts as my husband loves this and will eat tons of it)
Chopped Onion
Chopped garlic
1 large can diced tomatoes
2 cups fresh broccoli florets
salt and pepper to taste
Pasta of your choice...Penne works wonderfully
pinch of dried oregano (Your choice whether you use it or not. I don't)
Parmesan cheese
Directions
1. In a large skillet over medium heat, warm oil and add chicken, cook until slightly brown. Add onion and garlic to cook for about 5 minutes or until garlic is golden and onions are translucent.
2. Add tomatoes, broccoli, salt and pepper and oregano; stir well and bring to a boil. Cover and turn down heat to simmer for about 10 minutes.
3. Meanwhile, bring a large pot of lightly salted water to a boil. Add pasta and cook according to package directions.
4. Place serving of pasta in bowls and spoon sauce over top. Dust with parmesan cheese and enjoy.
