I've been mia for a while. Mostly because I've been stressed about work and sick. I had a couple of hell weeks. My hours got cut down at work, and I've been feeling just awful in general. My friend's had celiac's for a while. I stayed gluten-free for a while, but I introduced it back into my diet gradually, so I know how much I can get away with. The best flours to cook with, at least I found, were quinoa and corn flour. That being said, there's lots of places that cater to gluten-free, so it's nice that you can go out and find stuff that works. I mean, if Boston Pizza carries a gluten-free crust, you know you got options.

All the best of luck, and after a few weeks your symptoms should clear up. My friend's got a schwack load of other things she's allergic to, so here's hoping that there's not more to it than just the gluten.

Yeah, my mom was saying that a friend of hers said that things have improved a lot for people diagnosed with it. Not everything, but a lot of things specifically say gluten free on the label. Even Walmart had a whole section of snacks that are pretty good.

Thanks! I'm already starting to feel a little better. I was always told I had IBS, so I'm glad that I actually had the endoscopy done. There was the option for me not to do it, so I'm really thankful in the end that I did.

Celiac's! What a drag. :( On the plus side, though, Celiac's is really pretty easy to deal with. My nephew was diagnosed with it when he was about 18 months old, and, while it is obnoxious at first trying to figure out what has gluten in it and what doesn't, you fortunately live in the age where "gluten free" is a huge fad! XD It's going to be more expensive, sadly, but there are options. If you'd like, I'll have my sister email me over some tips and/or recipes she makes for my nephew (he's almost 4 now, so my sister knows all the tricks XD). They don't make a lot of money, so her tips will probably be pretty cost effective too.

Yeah, I was a bread fan. And a pasta fan. It is a lot easier to deal with now than back in the day, and I'm thankful that it wasn't something worse. It would be all kinds of awesome if you could get some tips and recipes for me! I would appreciate it so much. I'm still trying to learn to decipher labels that don't dumb it down with a gluten free icon. XD

Glad to know you're okay. ♥ My mum was diagnosed with Celiac Disease a few years ago, so we have a few good gluten-free recipes lying around. If you'd ever like any, let me know. :D
