     Back again and not really sure where to start. 2008 has been interesting so far, if i may be so generic and vague. It's a different kind of challenge than last semester. But as always, way too much to do and less time to do it in. So much reading, but I love my classes (arthurian legend, american lit., celtic history, environmental science). ( Read more... )

hugs, good thoughts, and mega prayers to you and this ever-transforming life, chickie! {What IS your natural hair color?!} It's hard for me to believe Liz is about to pop. Even harder for me to believe that I'm right there with her. LOL!
Way to go, Cathy!!! I can't believe she's employing herself. Your mom rocks so hard.
I'm not vegetarian because I <3 chicken way too much, but I do love me some veggie egg rolls... and they're way easy to make. :)

Easy shmeasy!!!! You can actually buy egg roll wraps at Wal*Mart (and some other grocery stores... I'm sure aplenty in Bham!)!! I get Melissa's Egg Roll Wraps (they're located with/around the tofu area), broccoli cabbage, and whatever other veggies. I like them with mushrooms, onions... you know, all of that good stuff that makes your breath smell horrible. ;) Anywho. Cook the mushrooms, cabbage, onions, & whatever else first. Then just put it in the wrap as instructed on the package, roll those babies up, and throw 'em in a fryer. :) We use EVOO to TRY to be a little healthier than, erm, any other oil? lol. It's amazing all of the stuff you can put in an egg roll wrapper when you get creative... lol... you should see us in the grocery store going "Hmm. Cheese. CHEESE EGG ROLLS! JUST CHEESE! It's like a fried mozzerella stick! Only egg rolled!" Yeah. You know. :-D
