Bok Choy Salad

I just made this as a side with my dinner (lemon crusted white fish and rice) and I think it tastes good, but if anyone else wants to make this, let me know how you like it, or what you would change. Jon is still at work, so hopefully he will like it when he tries it ( Read more... )

very interesting mix. I'm a little boggled at the raw bok choy, simply because in my experience, it's usually pickled or cooked, or at least blanched.

for the carrot, I'd suggest julienning them on a mandoline. as for the egg, what about hard-boiling? nuking eggs to me is kinda bleh.

the mayo is an interesting touch. due to the bok choy, I'd almost suggest an Asian theme, mixing in some soy sauce with the mayo. And ginger. And garlic. swap the carrots with unripe papaya. the herbs with fresh cilantro. celery with julienned onions or maybe scallions. and drop the bok choy.

okay, and that describes something else entirely. ::shrug:: unconventional, but interesting, probably tasty.

oh no, I didn't mean that the mayo wasn't Asian enough. on the contrary, I was saying that it contributes to the Asian theme. and yes, I was thinking of the Japanese. ^o^
