Pasta should be perfectly viable, and quite filling. Marinara, or a cheese sauce with garlic are good toppings, and can be made carnivore-friendly with the addition of chicken

oo pizza's actually a good idea, because i make killer tomato based sauces and great dough. the only extra cost is some decent quality mozzerlla and some toppings.
i have a big bag of cous cous in my cupboard, but I've never used it before, so I'll have to research how to make something awesome with it.
root veg is cheapest here, lots of potoatoes, carrots, turnips, parsnips, etc. I was looking at a cream based turnip and parsnip soup, but turnip can so easily come out bitter, so I don't know.

since jaco went veg one of the only meals we eat alltogether on a reg basis is spaghetti. lots and lots of spaghetti. and most times we make two seperate sauces cause when im craving my moms meat sauce and i get stupid tomato water i get cranky
I don't know if chick peas are cheap there like they are here, but canned ones are usually cheap and can be either warmed up and served with pesto, or made into hummus! YUMMY! Hummus (sp?) is stupidly easy and cheap to make and can be eaten with any kind of bread. Don't forget things like pumpkin and carrot soup with ginger - easy to make and cheap. ^_^
Chili is another great standby, and good old fashioned baked beans are yummy!
Best of luck! You may surprise yourself with how huge the variety can be - after all I make vegetarian stuff sometimes simply because the recipe is that easy and yummy. Nice break from meat and taters without bankrupting yourself.
Hey Lauri, a friend of mine just informed me that I will be going to Europe in late June. We plan to land in Ireland and go from there. Mind calling me and giving me some pointers when you get a chance?
