Gotta be a very good coffee - look at that foam! I haven't see a foam like that since I was a little kid...

If you go to the Peet's Coffee website, they have a section called Learn, where you can see how to brew coffee with that kind of foam. To be honest, I've only gotten that kind of foam from a high-end espresso machine (the kind they have in nice espresso houses and Italian restaurants) or a French Press.
