Ok, so it's not my garden...but I still benefit from it!
I held off my hunger for five minutes so I could take a pic of a garden dinner.
Bierocks, stuffed tomatoes, and a side salad!
Bierocks are a dish that I remember from my childhood, both my mom and my older sister made them a lot. This was my first attempt at making them and I thought they turned out great. I made the dough in the bread machine, so the dish was very easy to make. Traditional ones are filled with cabbage (from our garden), ground beef, and onions so I made half like that and the other half I replaced the beef with mushrooms for the vegetarians - both turned out very tasty!
The stuffed tomatoes were also from the garden, nice, big, plump ones! I filled them with my homemade Spanish rice. The green pepper, onion, and tomatoes in the rice were from the garden. Delicious!
The salad was made with lettuce, green onion, cucumber, tomatoes, and carrots that were all from the garden.
Sadly that was almost the last of the fresh garden produce. :-(
I am so sad that the cold is here and there will be no more garden!

We had a chopping party! Dorothy needed to wash, chop, bag, and freeze massive amounts of produce before it went bad so all of us gathered around the table with knives and attacked the job. With Dorothy, Gaylord, Jason, myself, and Rebecca all helping we got it all done in under an hour! Chop chop!
Zucchinis the size of Alex!
Rebecca ate more than she chopped. lol
