I'm the same in the way. I'll have already started thinking about how to explain an issue to someone in my head before realizing it.

What's really horrible is when someone has already beta'ed it and it's still riddled with mistakes. But bad betas is a whole other issue -_-

I love having a beta in my apartment =D If I can't find one I just whine at Kara until she does a read over.

Paragraphs usually mark that there is a change of ideas or thought. Also that someone else is speaking. It generally makes it easier to understand what is happening and also just makes it easier to read.*nods head* Nothing annoys me quite as much as reading a piece that has issues with paragraphs. I tend to just skip those all together, no matter how amazing they are, simply because if it's a pain to read I don't even care to try ( ... )
