Bought a turkey for Thanksgiving, which I suppose means I'm obligated to cook the damned thing. No goose this year -- I liked it last year, and I think it went well, and for exactly that reason I doubt I'll ever do it again. To indulge in a bit of Shirley Jackson pastiche:

No. I thought about sous-vide, but decided to go ultra-traditional. It will be stuffed and roasted, mostly according to recipes found in my Boston Cooking-School Cook Book, facsimile of 1896 edition.

I may balk, however, at stuffing without celery. I might make small batches of stuffings tomorrow to various recipes to test.

when you put it like that, it does seem to make sense. go out on a high note.

smoked turkey is also really good. so much flavor. it can be done in a good sized covered BBQ grill. my uncle made it.
