Cold Food for a Hot Night

Yesterday, in preparation for the impending doom of today, I made some of our favorite hot weather foods. I had made ceviche before, using this recipe--this time I used cod instead of snapper and some scallops and shrimp. When I've made it previously, I haven't found serranos, so I used habaneros instead and I think I prefer those. But, gosh, it's a lovely main dish for a night when I don't feel like cooking. The new experiment was white gazpacho--we've had it in restaurants several times and it's a particular favorite of Jason's, so I tried this recipe and it was very close to what I'm looking for. I think in the future I will double the bread and go back to the recommended amount of grapes (doubling them was suggested in the comments, so I tried that, but it made it too sweet) and try two cloves of garlic. But overall, extremely tasty. And cool--did I mention cool?
