Tonight was a good one for using up things I have on hand, which included pork chops, so I turned to the trusty
Just Pork Recipes for
#45 Baked Pork Chops Dijon. They came out very nicely, with a lot of lovely drippings, which we mopped up with sourdough bread. The recipe doesn't call for any salt and was quite flavorful without, but a little added at the table made it even better. Served with the corn on the cob we needed to use up, it made a very tasty dinner that was quick and easy. Next time I make it, I might serve it with mashed potatoes to soak up the drippings.
