Since it was too hot to turn on the oven and roast the chicken breasts I'd been planning to use, I went ahead and tried
#74 Bacon & Egg Pasta, working from a recipe in Better Homes & Gardens that is reprinted in
this blog. I had much better luck than that author did and it turned out to be quite tasty, although there are a few things I would do differently the next time. First off, I'd skip the red peppers--they just don't add much besides color and that I can get by garnishing with choppped tomatoes, or throwing some in with everything else at the end, and I like tomatoes better. I upped the bacon to six slices and would go for more the next time, especially if Alice continues to pick out all of hers and then go after mine! I did almost 2 cups of spinach and would double that, too. I went with four cloves of garlic and would go up to six. I forgot to add in any of the pasta liquid and I think that's definitely something to try. But really, what I want is to do this with duck eggs!
