The Jam Report (part 1)

So, 6 hours, 8 quarts of cherries, 31 half-pints of jam. Christine came over to help which made a big difference as it would have taken much longer if I had had to pit all those cherries myself, despite the nifty cherry pitter I acquired which was awesome ( Read more... )

Oh no! I was totally counting on that last batch to be the one to actually become jam. =) The third was the one with orange, right? Well, at least one came out as jam - the rest are officially waffle syrup. =)

The third batch is the orange-vanilla, so should be good. I'm think batches 1 & 2 are good for syrup. The 4th batch - I don't know what happened to it, maybe good syrup, might be better for mixing up a marinade or a nice cherry vinagrette.

There is a food show on npr dealing with gourmet and daily cookery, which often has great tips for uses of unusual ingredients, and call-in questions and answers. Can't recall the name of it now, but when I do at 3 in the morning I will call and tell you, if you don't already know this one. She could tell you exactly what went right and wrong with your batches.
