blueberry banana protein muffins
this morning i decided to use some of the 92 lbs of kodiak pancake mix we got from costo and make muffins. low cal, low sugar, and 6g of protein for each - they taste pretty good, too! would they be better with just white flour, butter, and sugar? OF COURSE. but small changes over time and all.
yesterday's breafkast
i am not a big breakfast eater, but am working HARD to have something besides coffee. yesterday's breakfast was two eggs scrambled with spinach, 1/3 of a slice of my homemade whole wheat bread, and half a cara cara orange.
some days it's eggs, some days its this hot mess.
day before yesterday's breakfast of green yogurt, oat milk, chia seeds, a banana, and some later added peaches. this has also served as a snack when i'm feeling peckish. on days that the protein is low, i add a scoop of protein powder. is it a milkshake? NO. :( BUT...i have a good imagination.

so this bread? not healthy. white, refined, high protein bread flour, milk, a bit of sugar, and olive oil. i have it sparingly (i've had one full slice since i've made it), but it is going to serve us as the 2x per month "kid needs white bread for a grilled cheese" bread. it's REALLY delicious and my baking skills are getting so much better now that we're at sea level (baking at high altitude has been a huge challenge for me).

the not so good is that mister got info on his big raise and title change. the upshot? not going to happen any time soon. =( his boss (co-owner of the company) got in trouble for trying to sneak mister's promotion/pay through all sorts of shady back doors and the OTHER co-owner shut him down. what's funny in all of this is that apparently mister's boss has tried to do stuff like this before. it's a madhouse there.
i still think something's in the works, but until then? we do what we do. :) the company is still paying him really well, is offering training/certifications, and the flexibility and unlimited PTO are amaing...so there are still perks.
none of this is going to stop our plans for barns and coops and creatures, but it might mean i have to hold off on rescuing those 40 thoroughbreds off of facebook.
