Lazy vegetarian dinner win!

Make 1 box Spanish Rice as directed with crushed tomatoes. In the last few minutes of cooking, add 1 can corn, drained, 1 can black or pinto beans, drained, some diced bell pepper (optional), and 1 packet taco seasoning. Serve with shredded cheese on top, fill veggie burritos, etc. The kids asked for this 2 nights in a row. :)

I had leftover Spanish rice from our tacos earlier in the week. I had a can of Mexican style corn and some leftover salsa that I threw in as well. SUPER SUPER YUMMY! You couldn't have posted this at a better time. :D

And I have to say the fact that I made it all from stuff I got at Aldi is even better. Yummy food on the cheap is perfect!

I make big batch of beans and rice once a week and the kids use it to fill burritos all week. If there's leftovers, I make my own freezer burritos for lunches or snacks on the go. It's a power food, for sure -- nutritious, delicious and cheap, cheap, cheap!
