HELP...Cuz I know y'all cook

I am running out of ideas for what to do for when company comes over. We're having people over on Fri. Usually I get stressed about trying to find recipes. Anyone have just incredible things that go over well at parties? My friends are into pretty simple and light things.

Will it be sit down dinner?

Have you done the Chicken in Tomato Basil Cream Sauce
What about Millon Dollar Spaghetti?

Both are sooooooooo easy to make, but not exactly "light"

I was also thinking of your "Last Supper" meal. That is to die for, but also not exactly light. Also, your chicken manicotti. Mmmmmmm!

Oh, that would be Mel's Mexican Chicken. Seriously, one of the best meals I've eaten. Actually, some of my best recipes have come from Mel. Taco soup, manicotti, baked spaghetti. Yum!

I guess chicken enchiladas might be out of the question, if it's light???? I have a GREAT recipe! Some prep time involved, but nothing too major. I'm making them for Brian's boss next month when he's in town. They are super yummy!!!! Let me know!

Chicken enchiladas sound great! I'm actually always looking for a really good enchilada recipe! I've tried a few that were good but nothing that was like 'Omg I want more!

Chicken Enchiladas:
2-4 cooked, shredded chicken breast (depending on how many you want to make)
1 can corn
1 yellow squash
1 zucchini
1-2 cans pinto beans (again, depending on how many you want ot make)
1 large can and 1 small can enchilada sauce
Cheddar cheese
Whole wheat tortillas

Mix corn, diced squash and diced zucchini in bowl. Heat and season pinto beans. In 9x13 baking pan, pour enough enchilada sauce to cover bottom. This next part goes in steps:
Heat tortilla in non-stick skillet, spoon in chicken, corn mix, pinto beans and cheese
Roll up and place in pan. Use toothpicks to keep rolled if necessary (remove before baking)
Continue until pan is full. Cover with remaining sauce and cheese
Cover and cook for 30 minutes at 350. Remove foil and cook for 10 more minutes to brown cheese.

I have friends that make these all veggie, just adding more veggies in place of the chicken!
