I read through old entries and found a reference to some recipe i made a long time ago that apparently I loved... man, I wish I knew where I got that one. I need something easy & proven good to cook for company this weekend.

How many people are you having? I have a recipe for the best chicken enchilada casserole ever that really only takes a little bit of time to put together and it's awfully good, so you can give that a shot. It always takes more tortillas then called for, but if you want something easy and proven good, it's certainly an option. :)

Here you go. :)

8 chicken breast halves (I used six)
12 corn tortillas, quartered
2 cans cream of chicken soup
2 cans diced green chiles
1 cup sour cream
2/3 cup milk
1 onion, diced
1 lb cheddar, longhorn or colby cheese, shredded

Preheat oven to 350.

Cook and dice chicken.

Mix soup, chilis, sour cream, milk and onion.

Butter a 9 x 13 baking dish.

Put a layer of tortillas on the bottom, then a layer of chicken, then sauce, then cheese. Continue layering, ending with cheese on top.

Bake at 350 for 45 minutes.

What would you like to make for them? Do you have any idea what the recipe might have been? Are there any dietary restrictions or allergies? Any children in the group? Is it going to be a formal dinner or just a simple get together?

Ok, so I figured out something for this time, but would love your suggestions on something fairly simple to make for next time... typically my company is just another couple so definitely on the lowkey side. And no children. ;)

Also the recipe that I forgot that I liked was some kind of easy chicken cordon bleu casserole. But I totally don't even remember what it tasted like, much less where I found the recipe.
