And the Baldur's Gate and Neverwinter Nights games are awesome if you like a good dose of character generation and RPG, though both are fairly old now (NWN2 has had a recent expansion pack, though).
I've heard good things about Planescape: Torment, too, and Star Wars: Knights of the Old Republic, for a more sci-fi-type-RPG-experience.
I still play Diablo II. I am very much a hack and slash player.
Trying not to think of Diablo III as I really want to play it. (I have to admit it was the main factor in deciding to get a pc and not a laptop last year)
ETA: a nice hack and slash game is God of War I and II. Not too replayable like D2 as it is not RPGish)

Out of curiousity, did you play any of the Quest for Glory games?
Have you played Elder Scrolls IV: Oblivion? Thats a more current and very fun RPG. If you own a 360 there's also Fable 2.
Those are all games where you have some if not all control over your chars development and where you go in terms of the storyline.

For $20, I just picked up Elder Scrolls IV. I'll post about it when I have time. :)
