It isn't very exciting. And I'm not positive they would be open at Christmas, but last year the weekend after Thanksgiving my man and I went to an inn in New Hampshire that was nice and quaint and the breakfast food was to die for. Each person had their own pot of tea and yogurt and a fruit cup and some sort of home made bread, like banana bread or blueberry bread. And that was to tide you over while breakfast was made! One morning it was cinnamon pecan stuffed french toast. Wow! And quite beautiful too. Trails on the grounds for walking. Just past Franconia Notch. THe place is called Bishop Farm and is run by the cousin of a friend, which is how we happened upon it. I think the website is www.bishopfarm.com

Not sure if this is something you'd be interested in, but many ski resorts are open over the holidays. You could just rent a townhouse/condo thing for a few days.

North Conway NH. has a lot of those types of things, set up for skiiers, but downtown is big into shopping and restaurants. True northern NHers feel its a tourist trap, but as tourist traps go, I always felt it was quite pleasant.
