I recently read about the rice rationing going on in North America, specifically in California

I always freeze my leftover rice as soon as it cools. Ditto for left over chinese restaurant rice, as I find that never lasts in the fridge. It defrosts quickly, and also is great to add to soup or chili to stretch out a meal.

but yum, the idea of rice pancakes makes me smile!
