"The Left Hand of Darkness" by Ursula LeGuin, my perpetual fave. Also, anything by Connie Willis, but especially "Doomsday Book" and "To Say Nothing of the Dog". It's the sort of writing where I stick my head down and forget about the world for hours. Then I come up for air (and a snack.. why am I so hungry?) and it's dark. Oops.
