Frou Frou's "Holding out for a Hero" is pretty cool. Butterfly Boucher's cover of "Changes" (both from the Shrek 2 soundtrack) is also good, but since David Bowie sings with her, I'm not sure if it counts as a cover or not.

Might I also suggest "Money" by the Flying Lizards and "Hazy Shade of Winter" by the Bangles. Not exactly anti-establishment rockers, but nice remakes all the same.
