Huh, that actually sounds doable. And we probably have everything except the celery root (spouse barely tolerates celery). Any ideas for a substitute? I'd also have to double check on the vinegar - and probably cut down on the garlic (for me) and the peas (for hubby).

Weird observation: It's been really hard to find frozen corn in Iceland for the past few months that's not frozen on the cob. (Those tend to be really terrible.) I have no idea why!

Now, I usually fail at making things earlier in the day. I have no idea how black beans would go down with my crowd (worth a shot though?!), and right now we have neither barley, spinach nor beans.

But. I've been meaning to venture out of my I've-made-it-so-many-times-I-do-it-with-my-spine comfort zone, so this might be a good jumping off point! :)

Yeah, it's a stew, you can substitute anything. Instead of celery root I'd suggest a small rutabaga, parsnips or turnips (celery roots aren't very big, so whatever's the equivalent in size). And instead of frozen corn, you can use canned corn -- I've done that, too, and it works just as well. You could swap the peas for green beans.

Someone commented about getting recipes, so I might start doing that once a week, I'll post a recipe?

If you like Mexican food, you'll probably like the black bean soup. It's nice, thick (not too thick), and really is easy to do -- if you guys have canned beans (already soaked, etc, so you don't have to do it again), it makes it loads easier.
