Actually, I did. Several years in the seminary until he decided the whole religion thing wasn't for him, onto the Army and theater work, then working on a consctruction site when he got word he'd been chosen to play the Doctor, with a number of memorable roles along the way.
From listening to various commentary tracks and interviews with him, Tom Baker strikes me as above all, as you said, a very nice guy, but one with a bit of a puckish, saucy sense of humor, so I could very well imagine him delivering the above line. Not out of anger, though, but in a more droll, ironic sort of way.
And of course it makes it all the funnier to imagine him flipping out and flipping someone off, precisely because it's so out of character, especially his character of the doctor.
