Cheeses of various kinds can bring a smile of yumminess to my face. Then a week later the same cheese makes me ill.

I have not a clue why, so if you find out I'd be happy know :)

My lactose intolerance is intermittent. I assume that I can't drink a glass of milk at any time, but if I really want something dairy-heavy, I eat it and face the consequences if they occur.

Yep. For me the kicker is my total allergy load. If I'm getting hit with a lot of allergies, then my capacity to deal with the more minor ones goes down, and anything food-related will make for suffering. OTOH, sometimes I can prevent those issues with allergy drugs.

Some foods give me major stomach cramps if I eat them on an empty stomach, or while I'm a bit dehydrated.

I find that my digestive system is directly attached to my mental state. i find sometimes i can just have whatever i want but when i am stressed if i eat anything i feel very sick (acid reflux, heartburn, bloating) fun fun:) i think it will get better and you will be able to enjoy your popcorn again :)
