Here is a tip about rosemary, from America's Test Kitchen: Put a sprig in the last 10 minutes or so of simmering, and then remove. You should have just enough rosemary flavor. "The Holy Trinity" Is what Emeril calles Celery, Carrot and Onion... And I would agree whole heartedly! That soup looks scrumptious even though the beans would wreak havoc with my GI tract I would eat it anyway!!
