Last night I made a new recipe that my Mom gave me to try. Kip said it was his FAVORITE so far! ((yeah)) Recipe with pictures behind the cut...

Pasta alla Amatriciana

6 oz. pancetta bacon, sliced 1/4 inch thick then cut into 1/4” x 1” strips
3 medium fresh tomatoes, chopped w/juice
1/2 cup parmesan reggiano cheese, grated
1 medium onion, chopped

That looks delicious!
Seems like you've modified the Julia Child method of cooking. Didn't she drink wine or sherry between the cooking? Champagne is much more elegant.

this recipe is going on my menu for next week FOR SURE...
So darn easy and yet I can tell it is pretty tastey. Can't wait to try it (may post prep shots on my own blog too...)
