Beijing's Indian summer has come to a close with a bang, it appears; after temperatures in the 60s and 70s most of the week, they plummeted today, and now a cold rain is coming down outside. At least the weather report is no longer forecasting snow for Sunday, which it was before ( Read more... )

Mmm, drama. Oh wait, I mean 油泼扯面. In pictures, at least, it looks like stroganoff.

Do they not have it in Taiwan? I suppose they wouldn't. In any case, it's nothing like stroganoff. It's wide, chewy noodles mixed with julienned cucumbers, beansprouts, and other miscellaneous things, in a bowl with a pool of oil at the bottom and some lajiao on top. I'm probably forgetting some ingredients too. It's awesome - one of my standard go-to Shaanxi dishes.

Cool...no I never heard that term or seen quite that dish. The Hakka noodles 板條 can be served similarly. Sort of like this:

But more often they seem to be stir-fried. There's a 'blade-noodle' (? shoot, I forget the Chinese) which Taiwan street-cafe guys make in a really fun way, slicing quickly off a lump of dough with a huge cleaver. I don't care much for these though...they are thick and chewy, a little too much noodle!
