For those who like vinegar, or have children in their life who like vinegar, a new-to-me recipe that was a hit at Thanksgiving with an 18-month-old.
I'm always trying to find an easy green vegetable recipe for Thanksgiving. This year it was made easier by buying ready-to-eat fresh green beans from Peapod. While 2 pounds of those were microwaving, we heated 1/2 cup of sugar and 1/2 cup of vinegar in a big pot until the sugar was dissolved. Add the cooked green beans, and garnish with crumbled bacon if desired. Voila!
Uncle Jim described them as "German potato salad green beans."
I cooked bacon in the morning to crumble, but to make it easier you can buy the jars of real crumbled bacon.
As for the vinegar, the recipe called for red wine vinegar but I used the last of a pear balsamic vinegar we were given by friends. I think regular balsamic would have been nice, too. But I'll admit -- I do like vinegar.
And so did our friends' kids - ages almost 4 and 18 months. Go figure.
