I keep forgetting to post!

So between watching the crap out of Glee and writing, I keep forgetting to post these. Alas... dinner the past couple nights!



This one was easy and delicious. I cooked up some rigitoni pasta, although I'm sure any pasta would do. While that was cooking I steamed some broccoli and then cooked asparagus with garlic. I chopped up some red peppers and olives. I cooled the pasta and then added all the veggies. I added some balsamic vinegar, italian dresssing, and italian spices. Boom. Dinner!





I cooked five red potatoes in the microwave and then chopped them up and cooled them. While the potatoes were cooking I chopped up some scallions, half an onions, and a couple stalks of celery. Mixed up some miracle whip and dijon mustard with a little paper and then I put them all together. We served the salad with jalapeno popper veggie burgers which were just veggie burgers with chipotle mayo and poppers on top of them. Yum!





I scraped the pulp out of two zukes, chopped up some celery, onion, and croutons. I cooked the celery and onion with Morning Star Farms vegetarian spicy sausage. While that was cooking I chopped up the zuke pulp, filled a cooking pan with some water and put the zuke shells in there. After the onions, celery, and sausage were done cooking I added the bread crumbs, zuke pulp, and a little bit of cheddar cheese. I shoveled that into the zuke shells and then cooked them for 20 minutes, then added more shredded cheddar cheese and cooked for another five minutes.





I re-hydrated TVP (texturized vegetable protein) by soaking it in water and then squeezing out the excess water. I sauteed onion, zukes, red pepper, and a couple cloves of garlic. After they had sauteed I added a can of tomato sauce and a can of tomato paste along with chili powder, cumin, crumbled oregano (from my room mates mom's garden), pepper, salt, and Mrs. Dash spicy seasoning. I let that cook for fifteen minutes then added kidney beans, black beans, and corn. I let that cook for another ten minutes. Delightful!
