A is for Acorn

My first attempt to prepare and consume an acorn squash!

First, I consulted my Vegetable Guru, alternatealto, for advice on preparing and cooking, and for reassurance that the green and orange objects I found in the Produce Isle weren't actually practical jokes.

Go you! I adore any kind of winter squash! Sugar drowning is definitely not required; a bit of butter and salt is all that's needed.

I think I need to go out and find me some squash....

Good job on the squash and blood sugar. The only problem I have with artichokes is the butter.

Inasmuch as they are an excellent conveyance thereof.

They are, indeed, an all too efficient delivery system for butter. I've managed to wean myself on to a mixture of mostly lower-fat buttery stuff, with some butter for flavour, a little lemon juice and rather too much seasoning salt. My partner favours fat-free mayo with fresh garlic.

Good for you,love!

Spaghetti squash is also good - a little, simple, tomato sauce and you won't feel deprived at all.

A couple of years ago, I actually became fond of this dish my mother made: she sauteed (in olive oil) zucchini, onions, summer squash, then layered it in a shallow pan with a little butter, bread crumbs and a sprinkling of Asiago cheese.

OMG YUM. You could play with it any way you wanted, but very, very good. :D

Oh, that sounds so tasty! Now I want to go get another acorn squash from the store - though I admit, I like them best with a bit of maple syrup on them. Mmm.
